Chocolate Raspberry Mousse


This is by far one of the easiest and yummiest desserts I have ever made, and I mean easy! Only four ingredients!


2 bars of dark bittersweet chocolate broken into small pieces

2 cups of 35% whipping cream

4 tbsp of granulated sugar

3 cups of raspberries, frozen or fresh


In a small heatproof bowl set over a saucepan of simmering water, heat 1/4 cup of the cream, stirring often until steaming

Remove bowl from pan and stir in chocolate until melted and smooth. Return it over the pan of hot water if it doesnt all melt but be careful not to overheat it

In a seperate bowl, using an electric mixer, whip remaining cream until soft peaks form. Beat in sugar  just until stiff peaks form

Fold the whipped cream into the chocolate mixture until smooth. Then fold the raspberries into the mixture, saving a few to top each dish.

Serves 6-8. I served the mousse in the cutest little glasses and they were a real hit! Hope you enjoy as much as we did!
